Wouldn't it be easier to use tags instead of categories, and then allow users to filter by tag?

It would tbh, and I already have half of a tags system set up - I was just planning on using it for stuff like age/clothes/locations etc. - but seeing as how there's often an overlap just between categories with the videos, I think it might be worth just using tags for everything. I'll keep working on it and see what works best
