I think you're referring to the preview image made up of video thumbnails.
If you're using Windows, I would recommend "GDS Video Thumbnailer", found here:
https://www.gdsoftware.dk/Products.aspx
It's probably not the most user friendly, but it should do all you would want, and it's free (and completely free - other free ones watermark or add a promotional thumbnail).
